Vegetable Fried Rice


Vegetable Fried Rice
Serves 4 people 
Ingredients:
• 4 cups cooked leftover basmati rice or long grain cups
• 2 tbsp vegetable oil
• 1 tsp sesame oil
• 3 garlic cloves, finely chopped
• 1 inch ginger, finely chopped
• 4 cups vegetables (green beans, carrots and green pepper)
• 1 tbsp soy sauce
• 2 tsp rice vinegar
• 1/4 tsp ground black pepper
• 1 tsp red chilli sauce (optional)
• Salt to taste
• Chopped Spring onions for garnish
Directions:
1. Heat vegetable oil in a wok or large frying pan over high heat. Add the sesame oil and then add garlic and ginger. Sauté for 1 minute or until aromatic. Add vegetables. Stir fry for 3-4 minutes or until tender. Stir in cooked rice.
2. Add soy sauce, white vinegar and ground black pepper. Stir fry for 3 minutes. Add salt to taste.
3. Add chilli sauce (optional) to make it spicy.
4. Garnish with chopped spring onions (or scallions).
